Many people suffering with head and neck cancers have difficulty eating as a result of their treatments.  I have found over the years, that my patients greatly benefit from the tasty recipes in their cookbooks that helps ensure they get the daily nutrition that they need.  The recipes were provided by survivors, caregivers, friends and healthcare professionals, as well as chefs who provided their culinary expertise for Taste Events.  In addition, the book offers a separate section on tips and suggestions along with a chapter entirely devoted to fortified foods.  Bon Appétit! =====Kim Marshall

Sumptuous Broccoli Cheese Soup

1 tbsp. melted butter

1/2 medium chopped onion

1/4 c. melted butter

1/4 c. flour

2 c. half & half cream

2 c. chicken stock

1/2 lb. fresh broccoli

1 c. carrot julienned

1/4 tsp. nutmeg

8 oz. grated sharp Cheddar cheese

Salt and pepper to taste

Saute onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3 to 5 minutes. Stir constantly and add half & half.  Add the chicken stock.  Simmer for 20 minutes. Add the broccoli, carrots, and onions. Cook over low heat for 20 to 25 minutes. Add salt and pepper. Puree in a blender. Return to heat and add cheese. Stir in nutmeg. Yield: 8 servings.
